It’s simply yummy and perfect for us spending time watching
the game. Rabbit probably isn’t on most
of your menu lists and I’ll be sharing more of the why and how in the near
future, but today I want to share the recipe for a yummy zucchini cake that
pairs perfectly with Dr Pepper for your game day party.
Chocolate Zucchini Cake

½ c. soft margarine
½ c. oil
1 ¾ c. sugar
3 eggs
2 c. grated zucchini
2 ½ c. flour
1 tsp. vanilla
½ c. buttermilk
5 Tbsp. cocoa
1 tsp. soda
½ tsp. salt
½ tsp cinnamon
Mix margarine, oil, sugar, and eggs. Add vanilla. Mix flour,
cocoa, soda, salt, and cinnamon. Add the mixture alternately with buttermilk.
Add zucchini. Pour into greased and floured 10x13 inch pan. Bake at 325 degrees
for 40-45 minutes.
